What What? A 125 calorie Watermelon Mintarita?

Oh how I love Independence Day. We get grilled foods, sweets, and red, white, and blue themed cakes. There is the off-chance you’ll lose a limb. Someone may get too tipsy and fall into a giant bowl of potato salad. You know, THE FREAKING FOURTH!

I still don’t want my arse to spread, or lose speed due to slovenliness, because I drank a bit too much.  This is why I am constantly coming up with new, lower cal cocktails. This next one is a REAL HUMDINGER.

125 calorie frozen watermelon mintarita

Prep Time: 2 minutes if syrup is made ahe

Ingredients

  • 1/2 cup frozen watermelon
  • 1 T mint simple syrup (recipe below)
  • 1 oz silver tequila
  • juice of half of one lime
  • zest of half of one lime

for the simple syrup

  • one cup sugar
  • one cup water
  • large handful fresh mint

Instructions

blend together and serve in a salt rimmed glass with a mint sprig.

for the syrup

In a small saucepan on high, combine all ingredients until sugar dissolves and syrup smells of mint. Take of heat and let cool.
