Georgia (peaches) On My Mind.

Well, they might actually be Jersey peaches, but still. Peaches are DOMINATING the grocery stores right now with their fuzzy deliciousness. Peaches have long been a symbol of the feminine mystique. (I really love your peaches, want to shake your trees) They have an entire harvest celebration in China for the peach, and I know at least three well coiffed canines in my neighborhood named “Peaches.”(And probably Gwyneth Paltrow’s next child-to round out the salad.)

Needless to say, these things are special for a reason. Paired with chicken and curry, you have a wonderful, savory dish. Paired with butterfat and sugar? Ice cream perfection. Paired with brown sugar, a little butter or earth balance, flour, and Uncle Sam’s honey almond cereal; a wonderful crisp.

And that’s just what I made. A DELICIOUS, high-fiber, peach crisp. Perfect with a dollop of honey sweetened ricotta or light whipped cream. Truly intoxicating.

  • 5-6 large, ripe, peaches
  • 1T cornstarch
  • 2T+2T brown sugar
  • 1/2 t cinnamon
  • 1/4 t nutmeg
  • 1 t vanilla
  • 3/4 T butter or earth balance
  • 1/3 cup flour
  • 1 cup Uncle Sam’s Honey Almond Cereal

Preheat oven to 350F Slice peaches and toss with cornstarch, 2T brown sugar, cinnamon, nutmeg, and vanilla. Pour peaches and all juices from fruit into an 8″-8″ pan. In a separate bowl combine butter, flour, 2T brown sugar. Stir until it looks like peas. Spread over top of peaches, sprinkle cereal on top of that. Bake until brown and bubbly; About 25 minutes.

Helpful tip: let it sit at room temp for about 20 minutes before eating it, the juices will thicken.


Yesterday was one of those days where it was hot everywhere. INCLUDING INSIDE the gym. Note to gyms: BUY MORE DEHUMIDIFIERS. I did a quick few interval miles on the treadmill and 10-15 minutes of intervals on the arc-trainer. Thank goodness I had my slightly gatoraded water. (I don’t like it full strength, I water it down a lot.) I came home and did the AWESOME Nike Training Center Hope Solo (holla!) strength training workout. I STILL feel the burn. That Goalie must have some gams! My tush is tired! I need more coffee. Now.

  1. I'm dying to make a peach crisp. I used up my whole Farmer's Market batch last week at breakfast and/or lunch and had none left for dessert! I really need to get another big barrel of them...
